For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice

For the Cottage Cheese Filling:

  • 1 cup cottage cheese, blended until smooth
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Step-by-Step Instructions

1. Prepare the Dough

  1. In a small bowl, dissolve the yeast in warm water. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the warm milk, sugar, salt, eggs, and the yeast mixture. Gradually add the flour and mix until a dough forms.
  3. Transfer the dough to a lightly floured surface. Roll it out into a rectangle, about 10×15 inches.
  4. Distribute the cold butter cubes evenly over two-thirds of the dough. Fold the unbuttered third over the middle, then fold the remaining third over, like folding a letter.
  5. Roll out the dough again into a rectangle and repeat the folding process two more times. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

2. Make the Apple Filling

  1. In a skillet over medium heat, melt the butter.
  2. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook until the apples are tender and the mixture thickens, about 10 minutes.
  3. Remove from heat and let the filling cool completely.
