  • 1 tablespoon balsamic vinegar

Step 1: Prepare the Stuffing

  1. In a medium-sized bowl, combine the chopped spinach, sun-dried tomatoes, feta cheese, Parmesan cheese, minced garlic, oregano, and red pepper flakes.
  2. Mix thoroughly until all ingredients are evenly distributed. Set aside.

Step 2: Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Carefully pat the chicken thighs dry with paper towels. Gently loosen the skin of each thigh, creating a pocket for the stuffing.
  3. Season the chicken thighs all over with salt and black pepper.

Step 3: Stuff the Chicken

  1. Take a generous spoonful of the prepared stuffing and gently place it under the skin of each chicken thigh, ensuring the stuffing is evenly distributed.
  2. Press the skin down to secure the stuffing inside.

Step 4: Sear the Chicken

  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Place the stuffed chicken thighs, skin-side down, in the skillet. Cook for 3–4 minutes or until the skin is golden and crispy.
  3. Flip the chicken thighs and cook for another 2 minutes.

  1. In a small bowl, whisk together the honey, Dijon mustard, and balsamic vinegar to create a glaze.
  2. Brush the glaze generously over the chicken thighs.
