For the Glaze:
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon balsamic vinegar
Step-by-Step Instructions
Step 1: Prepare the Stuffing
- In a medium-sized bowl, combine the chopped spinach, sun-dried tomatoes, feta cheese, Parmesan cheese, minced garlic, oregano, and red pepper flakes.
- Mix thoroughly until all ingredients are evenly distributed. Set aside.
Step 2: Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Carefully pat the chicken thighs dry with paper towels. Gently loosen the skin of each thigh, creating a pocket for the stuffing.
- Season the chicken thighs all over with salt and black pepper.
Step 3: Stuff the Chicken
- Take a generous spoonful of the prepared stuffing and gently place it under the skin of each chicken thigh, ensuring the stuffing is evenly distributed.
- Press the skin down to secure the stuffing inside.
Step 4: Sear the Chicken
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Place the stuffed chicken thighs, skin-side down, in the skillet. Cook for 3–4 minutes or until the skin is golden and crispy.
- Flip the chicken thighs and cook for another 2 minutes.
Step 5: Add the Glaze
- In a small bowl, whisk together the honey, Dijon mustard, and balsamic vinegar to create a glaze.
- Brush the glaze generously over the chicken thighs.
