Instructions :

Step 1: Prepare the Roast

  1. Season and Flour the Roast: Season the chuck roast with salt and pepper. Dredge the roast in the flour, shaking off any excess.

Step 2: Assemble the Slow Cooker

  1. Layer Vegetables: Place the carrots, sliced onion, and celery chunks in the bottom of the slow cooker.
  2. Add the Roast: Place the floured roast on top of the vegetables.

Step 3: Add Seasonings and Liquid

  1. Mix Seasonings: In a small bowl, combine the beef gravy mix, ranch dressing mix, and Italian dressing mix.
  2. Add to Slow Cooker: Sprinkle the seasoning mixture evenly over the roast and vegetables.
  3. Add Water: Pour the water around the sides of the roast to ensure the seasonings stay on top.

Step 4: Cook the Roast

  1. Slow Cook: Cover the slow cooker with the lid and cook on low for 8-10 hours, or on high for 4-6 hours, until the meat is tender and easily shreds with a fork.

Serving

  1. Serve: Once the pot roast is done, remove it from the slow cooker and shred or slice the meat. Serve the roast with the cooked vegetables and some of the cooking liquid as gravy.
