Instructions:
1. Prepare the Steak
- Take the steaks out of the refrigerator at least 30 minutes before cooking to allow them to reach room temperature.
- Rub the steaks with olive oil, salt, and black pepper. Sprinkle with minced garlic, rosemary, and thyme, pressing the herbs gently into the meat.
2. Sear and Cook the Steak
- Preheat your oven to 400°F (200°C).
- Heat a cast-iron skillet over medium-high heat until very hot.
- Add 1 tbsp of butter to the skillet. Once melted and sizzling, sear the steaks for 2-3 minutes on each side until a deep golden crust forms.
- Transfer the skillet to the oven and cook for an additional 5-7 minutes, depending on your preferred doneness:
- Medium-rare: 130-135°F (54-57°C)
- Medium: 135-145°F (57-63°C)
- Medium-well: 145-155°F (63-68°C)
- Remove the skillet from the oven, add the remaining butter, and baste the steaks with the melted butter. Let the steaks rest for 5-10 minutes.
