Slow Cooker Garlic Butter Chicken & Ribeye with Parmesan Mashed Potatoes

Instructions

Step 1: Prepare the Garlic Butter Chicken

  1. Sear the chicken: In a skillet over medium-high heat, melt 1 tablespoon of butter. Season the chicken breasts with salt, pepper, thyme, and rosemary. Sear the chicken on both sides until golden brown, about 2-3 minutes per side. It’s not necessary to cook the chicken through at this stage, as it will cook further in the slow cooker.
  2. Prepare the slow cooker: Place the seared chicken breasts into the bottom of your slow cooker. In the same skillet, melt the remaining butter, then add the minced garlic and cook for 1 minute until fragrant. Pour the garlic butter mixture over the chicken breasts. Add the chicken broth and lemon juice to the slow cooker.
  3. Cook: Cover and cook on low for 4-5 hours or until the chicken is fully cooked and tender. Before serving, garnish with chopped parsley.

Step 2: Prepare the Ribeye Steaks

  1. Sear the steaks: Heat olive oil and butter in a large skillet over medium-high heat. Season the ribeye steaks generously with salt and pepper. Once the oil is hot, sear the steaks for about 3-4 minutes per side, or until they reach your desired level of doneness. Add the smashed garlic and rosemary sprig to the pan during the last minute of searing for extra flavor.
  2. Rest the steaks: Once seared, transfer the steaks to a plate and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute and keeps the meat tender.

Step 3: Prepare the Parmesan Mashed Potatoes

  1. Boil the potatoes: Place the peeled and cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the water, then return the potatoes to the pot.
  2. Mash the potatoes: Using a potato masher or hand mixer, mash the potatoes until smooth. Add the butter and heavy cream, and continue mashing until the potatoes are creamy and well-combined. Stir in the Parmesan cheese and garlic powder (if using). Season with salt and pepper to taste.
  3. Serve: Garnish with chopped parsley before serving.

Step 4: Assemble and Serve

  • Plate the meal: Serve the garlic butter chicken alongside the ribeye steaks. Spoon a generous portion of Parmesan mashed potatoes onto each plate.
  • Garnish: Top the chicken with a little more fresh parsley for a burst of color and flavor.
