Optional Toppings:

  • Sprinkle of coarse sugar
  • Chopped nuts
  • Dried currants or raisins

Step-by-Step Instructions for Perfect Molasses Buns

1. Activate the Yeast

In a small bowl, combine the warm milk and granulated sugar, stirring to dissolve the sugar. Sprinkle the yeast over the mixture and let it sit for 5-10 minutes until it becomes frothy. This step ensures the yeast is alive and ready to work its magic.

2. Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, salt, cinnamon, ginger, and nutmeg. These spices lend the buns their signature warmth and aroma.

3. Combine Wet Ingredients

In a medium bowl, whisk together the molasses, melted butter, and egg. Gradually stir in the activated yeast mixture. This creates a rich, liquid base to infuse the dough with flavor.

4. Form the Dough

Slowly pour the wet ingredients into the dry ingredients, mixing with a wooden spoon or a stand mixer fitted with a dough hook. Knead the dough for about 8-10 minutes (or 5 minutes in the mixer) until it becomes smooth and elastic. If the dough is too sticky, add a tablespoon of flour at a time until it reaches the right consistency.

5. First Rise

Shape the dough into a ball and place it in a greased bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free area for about 1 hour, or until it doubles in size.

6. Shape the Buns

Punch down the risen dough to release air. Divide it into 12 equal pieces and roll each piece into a smooth ball. Place the buns on a parchment-lined baking sheet, spacing them about 2 inches apart. Cover them loosely and let them rise again for 30-40 minutes, or until puffy.
