Step 1: Prepare the Ingredients

- Slice the jalapeño peppers in half lengthwise and remove the seeds and membranes. Set aside.
- In a small bowl, mix the cream cheese and shredded cheese until smooth. Add a pinch of garlic powder for extra flavor.
Step 2: Flatten the Chicken
- Place each chicken breast between two sheets of plastic wrap or parchment paper.
- Use a meat mallet or rolling pin to pound the chicken to an even thickness of about ¼ inch (0.6 cm).
- Season the chicken on both sides with garlic powder, smoked paprika, onion powder, salt, and pepper.
Step 3: Assemble the Rolls
- Spread about 1-2 tablespoons of the cheese mixture into each halved jalapeño pepper.
- Lay a piece of flattened chicken on a clean surface and place a stuffed jalapeño at one end.
- Roll the chicken tightly around the jalapeño and secure with a toothpick if needed.
- Wrap each chicken roll with 1-2 slices of bacon, ensuring the bacon completely covers the chicken to lock in moisture and flavor.
Step 4: Cook the Chicken Rolls
Option 1: Oven-Baked
- Place the bacon-wrapped chicken rolls seam-side down on the prepared baking sheet.
- Bake for 25-30 minutes, turning halfway through, until the chicken is cooked through (internal temperature of 165°F or 74°C) and the bacon is crispy.
- For an extra-crispy finish, broil the rolls for an additional 2-3 minutes.
