Step-by-Step Instructions
Step 1: Prepare the Steak
- Trim and slice the steak into thin, wide strips (approximately 3 inches wide and 6 inches long). This size will allow for easy rolling.
- In a medium bowl, combine the marinade ingredients: olive oil, soy sauce, lime juice, garlic powder, onion powder, smoked paprika, and black pepper.
- Place the steak strips into the marinade, ensuring each piece is fully coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
Step 2: Sauté the Vegetables
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the bell peppers, onion, and garlic, seasoning with chili powder, smoked paprika, cumin, cayenne pepper, salt, and pepper.
- Cook for 5-7 minutes until the vegetables are slightly softened but still retain their vibrant colors.
- Remove the skillet from heat and allow the vegetables to cool slightly.
Step 3: Assemble the Roll-Ups
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay a strip of marinated steak flat on a clean surface.
- Place a small portion of the sautéed vegetables onto one end of the steak strip.
- Roll the steak tightly around the vegetables and secure with a toothpick.
- Repeat this process with all the steak strips and vegetables.
Step 4: Cook the Roll-Ups
- Arrange the roll-ups on the prepared baking sheet, ensuring they are evenly spaced.
- Bake in the preheated oven for 15-20 minutes, or until the steak reaches your desired doneness (medium-rare is recommended for maximum tenderness).
- Alternatively, you can grill the roll-ups over medium heat for 3-4 minutes per side, using tongs to turn them gently.
Step 5: Garnish and Serve
- Remove the toothpicks from the roll-ups before serving.
- Garnish with freshly chopped parsley or cilantro for a pop of color and added freshness.
- Serve hot with your favorite accompaniments, such as:
- Guacamole
- Salsa
- Greek yogurt or sour cream
- A squeeze of fresh lime juice
