For the Frosting
- 2 cups unsalted butter, softened
- 5 cups powdered sugar
- 2 teaspoons vanilla extract
- 1/4 cup heavy cream (add more as needed for consistency)
- A pinch of salt
Optional Decorations
- Sprinkles, edible glitter, or other colorful toppings
- Fruit slices (for added freshness and color)
Instructions
Step 1: Prepare the Cake Batter
- Preheat the oven to 350°F (175°C). Grease and line four 8-inch round cake pans with parchment paper to prevent sticking.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3-5 minutes. Use an electric mixer on medium speed for best results.
- Add the eggs, one at a time, mixing well after each addition.
- Sift together the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Begin and end with the dry ingredients.
- Stir in the vanilla extract until the batter is smooth.
Step 2: Divide and Color the Batter
- Divide the batter evenly into separate bowls, depending on how many colors you plan to use. We recommend using at least five different colors for a vibrant effect.
- Add a small amount of gel food coloring to each bowl and gently fold it into the batter. Gel coloring is preferred as it yields more vibrant hues without altering the texture of the cake.
- Mix each color thoroughly until the batter is uniform in color and free of streaks.
Step 3: Bake the Cake Layers
- Pour each color of batter into the prepared pans, smoothing the tops with a spatula.
- Bake the layers for 20-25 minutes or until a toothpick inserted into the center comes out clean. Be sure to rotate the pans halfway through to ensure even baking.
- Once baked, let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 4: Prepare the Buttercream Frosting
- In a large mixing bowl, beat the butter on medium-high speed until it becomes creamy and smooth.
- Gradually add in the powdered sugar and continue mixing on low speed, then increase to high once the sugar is incorporated.
- Add the vanilla extract, heavy cream, and a pinch of salt to the frosting. If the consistency is too thick, add a little more cream; if it’s too thin, add a bit more powdered sugar.
- Beat for 3-5 minutes on high speed until the frosting is light, fluffy, and spreadable.
