For the Topping

  • 1/4 cup unsalted butter, melted
  • 1/2 cup powdered sugar (or granulated sugar for a crunchy coating)

Step-by-Step Instructions for Baked Pączki

Step 1: Activate the Yeast

  1. In a small bowl, combine the warm water, a pinch of sugar, and the active dry yeast. Stir gently and let it sit for 5–10 minutes until it becomes frothy. This indicates that the yeast is active.

Step 2: Prepare the Dough

  1. In a large mixing bowl, combine the sifted flour, sugar, salt, and nutmeg (if using).
  2. In another bowl, whisk together the warmed milk, melted butter, eggs, vanilla extract, and the activated yeast mixture.
  3. Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon or a dough hook attachment on a stand mixer.

Step 3: Knead the Dough

  1. Knead the dough on a lightly floured surface for about 8–10 minutes until it becomes smooth and elastic.
  2. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1–1.5 hours, or until it doubles in size.

Step 4: Shape the Pączki

  1. Once the dough has risen, punch it down gently to release air.
  2. Roll out the dough to about 1/2 inch thickness on a floured surface.
  3. Use a round cutter (about 3 inches in diameter) to cut out circles of dough.

Step 5: Add the Filling

  1. Place a small dollop of jam or custard in the center of each circle.
  2. Fold the edges over the filling and pinch to seal. Roll gently into a ball, ensuring the seams are well sealed to prevent leaking during baking.
