For the Topping
- 1/4 cup unsalted butter, melted
- 1/2 cup powdered sugar (or granulated sugar for a crunchy coating)
Step-by-Step Instructions for Baked Pączki
Step 1: Activate the Yeast
- In a small bowl, combine the warm water, a pinch of sugar, and the active dry yeast. Stir gently and let it sit for 5–10 minutes until it becomes frothy. This indicates that the yeast is active.
Step 2: Prepare the Dough
- In a large mixing bowl, combine the sifted flour, sugar, salt, and nutmeg (if using).
- In another bowl, whisk together the warmed milk, melted butter, eggs, vanilla extract, and the activated yeast mixture.
- Gradually add the wet ingredients to the dry ingredients, mixing with a wooden spoon or a dough hook attachment on a stand mixer.
Step 3: Knead the Dough
- Knead the dough on a lightly floured surface for about 8–10 minutes until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1–1.5 hours, or until it doubles in size.
Step 4: Shape the Pączki
- Once the dough has risen, punch it down gently to release air.
- Roll out the dough to about 1/2 inch thickness on a floured surface.
- Use a round cutter (about 3 inches in diameter) to cut out circles of dough.
Step 5: Add the Filling
- Place a small dollop of jam or custard in the center of each circle.
- Fold the edges over the filling and pinch to seal. Roll gently into a ball, ensuring the seams are well sealed to prevent leaking during baking.
