Step-by-Step Method

Step 1: Prepare the Brine

  1. In a large pot or mixing bowl, combine water and salt.
  2. Stir until the salt is completely dissolved.
  3. For added flavor, mix in optional sugar and aromatics like garlic, peppercorns, or herbs.

Step 2: Prepare the Chicken

  1. Remove the chicken from its packaging and discard any excess liquid or giblets.
  2. Rinse the chicken under cold water to remove surface impurities. Pat it dry with paper towels.

Step 3: Submerge the Chicken

  1. Place the chicken (whole or in pieces) into the brine, ensuring it is fully submerged.
    • If necessary, weigh the chicken down with a plate to keep it submerged.
  2. Cover the container with a lid or plastic wrap.

Step 4: Refrigerate

  1. Transfer the brining chicken to the refrigerator.
  2. Allow the chicken to soak for:
    • Whole chicken: 8–12 hours
    • Chicken pieces: 1–2 hours
    • Boneless, skinless cuts: 30 minutes to 1 hour

Step 5: Remove and Rinse

  1. Remove the chicken from the brine after the recommended time.
  2. Rinse the chicken thoroughly under cold running water to remove excess salt from the surface.
  3. Pat the chicken dry with paper towels.

Step 6: Cook as Desired

  1. Season the chicken lightly (since it’s already seasoned from the brine) and cook using your preferred method—grilling, roasting, frying, or baking.
  2. Monitor cooking time, as brined chicken may cook slightly faster due to increased moisture content.
