Step 1: Prepare the Steaks

  1. Lay the steaks flat on a clean surface. Using a sharp knife, create a deep pocket in each steak without cutting all the way through.
  2. Season the inside and outside of the steaks with salt, pepper, garlic powder, and smoked paprika.

Step 2: Stuff the Steaks

  1. Stuff each steak pocket with a slice or two of fresh mozzarella cheese. Ensure the cheese is securely tucked inside.
  2. Close the opening with kitchen twine or secure it with toothpicks to prevent the cheese from oozing out during cooking.

Step 3: Sear the Steaks

  1. Heat 2 tablespoons of olive oil in a heavy-bottomed skillet or cast-iron pan over medium-high heat.
  2. Add the stuffed steaks and sear for 2–3 minutes on each side until a golden crust forms.
  3. Reduce the heat to medium, cover the pan, and cook for an additional 4–6 minutes for medium-rare, or longer for your desired doneness. Remove the steaks from the skillet and let them rest.

  1. In the same skillet, melt the butter and add the olive oil.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Toss in the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2–3 minutes per side until pink and opaque.
  4. Drizzle the shrimp with lemon juice and stir well.

Step 5: Assemble and Serve

  1. Plate each mozzarella-stuffed steak and top it with a generous portion of garlic butter shrimp.
  2. Garnish with fresh parsley and serve with lemon wedges on the side.
