Shred the Beef :
Once the beef is done, remove it from the slow cooker and return the lid to keep the sauce warm. Use two forks to shred the beef into bite-sized pieces and return the shredded meat to the slow cooker, mixing it into the sauce. Taste and adjust the salt, if needed.
Prepare the Steak :
Generously season the flank steak on both sides with salt. Place the steak in the bottom of a 6-quart slow cooker.
Add the Chipotle Peppers and Broth :
Add the chipotle peppers with their adobo sauce and the beef broth to the slow cooker.
Mix in the Cornstarch :
In a small bowl, mix the cornstarch with 1 tablespoon of water to make a slurry. Whisk this mixture into the slow cooker to help thicken the sauce.
Cook :
Cover and cook on low for 7 hours, or on high for 4 hours. The beef should be fork-tender by the end of the cooking time.
