For the Filling:

  • 6 slices of bacon (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup cream cheese (softened)
  • 2 tablespoons heavy cream
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • Salt and black pepper (to taste)

Step-by-Step Instructions

Step 1: Prepare the Ingredients

Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. Cook the bacon until crispy, then crumble it into small pieces. Chop the fresh herbs and set them aside.

Step 2: Roll Out the Puff Pastry

On a lightly floured surface, roll out the puff pastry into a rectangle or a shape that fits your baking dish. Transfer it to the prepared baking sheet, leaving enough space to fold the edges over the filling.

Step 3: Create the Cheese and Herb Filling

In a medium-sized mixing bowl, combine the cream cheese, heavy cream, Dijon mustard, garlic powder, salt, and pepper. Mix until smooth and creamy. Fold in the shredded cheddar cheese, Parmesan cheese, crumbled bacon, parsley, and thyme until evenly distributed.

Step 4: Assemble the Pie

Spread the cheese and herb filling evenly onto the puff pastry, leaving a 1-inch border around the edges. Fold the edges of the puff pastry over the filling, creating a rustic border. Brush the edges with the beaten egg to ensure a golden, shiny crust.

Step 5: Bake the Pie

Place the assembled pie in the preheated oven and bake for 25–30 minutes or until the puff pastry is golden brown and flaky. The filling should be bubbly and aromatic. Rotate the baking sheet halfway through the baking time for even browning.
