Step-by-Step Instructions

1. Prepare the Cookie Dough

  1. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt.
  2. In a separate large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and red food coloring.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined.

2. Chill the Dough

  1. Cover the dough with plastic wrap and refrigerate for at least 1 hour to make it easier to handle.

3. Roll and Cut the Cookies

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out the dough on a floured surface to about 1/4-inch thickness.
  3. Use a Christmas tree-shaped cookie cutter to cut out cookies and place them on the prepared baking sheets.

4. Bake and Cool

  1. Bake for 8–10 minutes, or until the edges are set.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

5. Decorate the Trees

  1. Using green royal icing, outline and fill in the cookie surface to resemble a Christmas tree.
  2. Add edible gold stars, sprinkles, or sugar pearls as ornaments. Let the icing set before serving.
