Step 1: Prepare the Pork Fillets

  1. Trim any excess fat or silver skin from the pork fillets.
  2. Butterfly the fillets by slicing them lengthwise, being careful not to cut all the way through. Open them like a book and flatten slightly with a meat mallet for even thickness.

Step 2: Assemble the Rolls

  1. Lay the flattened pork fillets on a clean surface.
  2. Season both sides generously with salt, pepper, thyme, and garlic powder.
  3. Arrange the prunes in a straight line along the center of each fillet. Roll the fillets tightly around the prunes to form a log shape.

Step 3: Wrap in Bacon

  1. Lay the bacon slices slightly overlapping on a cutting board.
  2. Place the pork roll on one end of the bacon layer and roll it up tightly, ensuring the bacon fully covers the pork. Secure with toothpicks if needed.

Step 4: Sear the Rolls

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Sear the bacon-wrapped pork rolls on all sides until the bacon is golden and crisp. This step locks in the juices and enhances the flavor.

Step 5: Bake to Perfection

  1. Preheat your oven to 375°F (190°C).
  2. Transfer the seared pork rolls to a baking dish. Cover loosely with foil and bake for 25–30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
