Ingredients

For the Ribeye Steak

  • 2 ribeye steaks (1-inch thick)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (optional)
  • Salt and freshly ground black pepper to taste

For the French Onions & Mushrooms

  • 2 large yellow onions, thinly sliced
  • 1 cup cremini or button mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon sugar (optional, for caramelization)
  • ½ teaspoon salt
  • ½ cup beef or chicken broth
  • 1 teaspoon Worcestershire sauce

Step-by-Step Instructions

Step 1: Prepare the Steaks

  1. Season the Ribeye: Generously season both sides of the steaks with salt and pepper. Let them rest at room temperature for 20–30 minutes to enhance flavor and ensure even cooking.
  2. Preheat the Pan: Heat a cast-iron skillet over medium-high heat until it’s smoking hot. Add olive oil to coat the bottom.
  3. Sear the Steaks: Place the steaks in the hot pan and sear for 3–4 minutes on each side, or until a crust forms. Lower the heat slightly if needed.
  4. Butter-Baste: Add butter, garlic, and thyme to the skillet. Tilt the pan and use a spoon to baste the steaks with the melted butter for 1–2 minutes.
  5. Rest the Steaks: Transfer the steaks to a plate and cover loosely with foil. Allow them to rest for 5–10 minutes to lock in juices.

Step 2: Make the French Onions

  1. Caramelize the Onions: In a separate skillet, heat olive oil and butter over medium heat. Add the sliced onions and sprinkle with a pinch of salt and sugar. Stir occasionally for 15–20 minutes until they turn golden brown.
  2. Deglaze the Pan: Pour in the broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Let it simmer for 3–5 minutes until slightly thickened.

Step 3: Sauté the Mushrooms

  1. Add the mushrooms to the skillet with the onions and stir to combine. Cook for another 5–7 minutes until the mushrooms are tender and golden.
  2. Taste and adjust seasoning with salt and pepper as needed.

Step 4: Assemble the Dish

  1. Place the rested ribeye steaks on a serving platter or individual plates.
  2. Generously spoon the French onions and mushrooms over the top of each steak.
  3. Garnish with fresh thyme or parsley for an added touch of elegance.
