For the Pineapple Drizzle
- ½ cup (120ml) pineapple juice
- ¼ cup (50g) granulated sugar
- 1 tablespoon unsalted butter
Tools You’ll Need
- A 9-inch (23 cm) round cake pan
- A mixing bowl
- A whisk or electric mixer
- A saucepan
- A cooling rack
Step-by-Step Instructions
Step 1: Prepare the Pan
Preheat your oven to 350°F (175°C). Grease and flour the cake pan, or line it with parchment paper for easy removal.
Step 2: Mix the Dry Ingredients
In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
Step 3: Cream Butter and Sugar
In another large bowl, use a whisk or electric mixer to cream the softened butter and sugar until the mixture is light and fluffy. This step is essential for a tender, airy cake.
Step 4: Incorporate the Eggs and Vanilla
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract for added depth of flavor.
Step 5: Combine Wet and Dry Ingredients
Alternate adding the dry ingredients and pineapple juice to the creamed butter mixture, starting and ending with the dry ingredients. Mix gently until just combined to avoid overworking the batter.
Step 6: Fold in the Pineapple
Gently fold in the drained crushed pineapple, ensuring it’s evenly distributed throughout the batter.
Step 7: Bake the Cake
Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a cooling rack.
Step 8: Prepare the Pineapple Drizzle
While the cake cools, make the drizzle. In a small saucepan, combine the pineapple juice, sugar, and butter. Heat over medium-low, stirring until the sugar dissolves and the mixture becomes slightly syrupy. Remove from heat and let it cool slightly.
Step 9: Drizzle the Cake
Using a skewer or fork, poke small holes across the top of the cooled cake. Slowly pour the pineapple drizzle over the cake, allowing it to seep into the sponge. This step ensures every bite is bursting with flavor and moisture.
