Step 1: Prep the Ingredients

  1. Prepare the sausage. Slice the smoked sausage into even-sized rounds for even cooking.
  2. Dice the potatoes. Peel and cut the potatoes into small cubes to ensure they cook evenly and crisp up nicely.
  3. Slice the onions and peppers. Thinly slice the onion and bell pepper into strips.

Step 2: Cook the Potatoes

  1. Heat the skillet. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
  2. Fry the potatoes. Add the diced potatoes to the skillet, spreading them out in an even layer. Cook for 8-10 minutes, flipping occasionally, until golden brown and crispy. Season with salt, pepper, and smoked paprika.
  3. Remove and set aside. Transfer the cooked potatoes to a plate and set aside.

Step 3: Cook the Sausage

  1. Add sausage to the skillet. In the same skillet, add the sliced smoked sausage. Cook for 5-6 minutes, stirring occasionally, until browned and slightly crispy.
  2. Remove and set aside. Transfer the sausage to a plate, leaving any drippings in the skillet.

Step 4: Cook the Onions and Peppers

  1. Add more oil if needed. If the skillet looks dry, add the remaining tablespoon of oil.
  2. Sauté the onions and peppers. Add the onions and bell peppers to the skillet. Cook for 5-7 minutes, stirring frequently, until softened and caramelized. Add the minced garlic and cook for 1 more minute.
  3. Season. Sprinkle with dried thyme, a pinch of salt, and pepper.

Step 5: Combine Everything

  1. Return ingredients to the skillet. Add the cooked potatoes and smoked sausage back into the skillet with the onions and peppers.
  2. Toss to combine. Stir gently to combine all ingredients, ensuring they’re evenly coated in the seasonings. Cook for 2-3 minutes to heat everything through.
