Step 1: Prep the Ingredients
- Prepare the sausage. Slice the smoked sausage into even-sized rounds for even cooking.
- Dice the potatoes. Peel and cut the potatoes into small cubes to ensure they cook evenly and crisp up nicely.
- Slice the onions and peppers. Thinly slice the onion and bell pepper into strips.
Step 2: Cook the Potatoes
- Heat the skillet. In a large skillet, heat 2 tablespoons of vegetable oil over medium heat.
- Fry the potatoes. Add the diced potatoes to the skillet, spreading them out in an even layer. Cook for 8-10 minutes, flipping occasionally, until golden brown and crispy. Season with salt, pepper, and smoked paprika.
- Remove and set aside. Transfer the cooked potatoes to a plate and set aside.
Step 3: Cook the Sausage
- Add sausage to the skillet. In the same skillet, add the sliced smoked sausage. Cook for 5-6 minutes, stirring occasionally, until browned and slightly crispy.
- Remove and set aside. Transfer the sausage to a plate, leaving any drippings in the skillet.
Step 4: Cook the Onions and Peppers
- Add more oil if needed. If the skillet looks dry, add the remaining tablespoon of oil.
- Sauté the onions and peppers. Add the onions and bell peppers to the skillet. Cook for 5-7 minutes, stirring frequently, until softened and caramelized. Add the minced garlic and cook for 1 more minute.
- Season. Sprinkle with dried thyme, a pinch of salt, and pepper.
Step 5: Combine Everything
- Return ingredients to the skillet. Add the cooked potatoes and smoked sausage back into the skillet with the onions and peppers.
- Toss to combine. Stir gently to combine all ingredients, ensuring they’re evenly coated in the seasonings. Cook for 2-3 minutes to heat everything through.
