Step 1: Prepare the Marinade
- In a medium bowl, whisk together Dijon mustard, whole grain mustard, olive oil, lemon juice, and apple cider vinegar.
- Add minced garlic, honey, and the herbs: rosemary, thyme, and oregano.
- Season with paprika, salt, and freshly ground black pepper. Mix well until the marinade is smooth and aromatic.
Step 2: Marinate the Turkey
- Rinse the turkey thigh fillets under cold water and pat them dry with a paper towel.
- Place the fillets in a shallow dish or a resealable plastic bag.
- Pour the marinade over the turkey, ensuring each piece is thoroughly coated.
- Cover the dish or seal the bag, then refrigerate for at least 2 hours or overnight for best results. This allows the flavors to fully infuse the meat.
Step 3: Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease a baking dish with a thin layer of olive oil to prevent sticking.
Step 4: Sear the Turkey (Optional, for Extra Flavor)
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
- Sear each fillet for 2–3 minutes per side until golden brown. This step locks in the juices and adds a layer of caramelized flavor.
Step 5: Bake the Turkey
- Transfer the turkey thigh fillets to the prepared baking dish.
- If desired, pour 1/2 cup of chicken broth into the dish to keep the turkey moist during baking.
- Cover the dish with aluminum foil and bake for 25–30 minutes. Remove the foil in the last 10 minutes to allow the tops to brown slightly.
- Use a meat thermometer to check that the internal temperature of the turkey reaches 165°F (74°C).
