Step-by-Step Instructions
Step 1: Prepare the Fruit Filling
- Cook the apples or peaches. In a medium saucepan over medium heat, combine the diced fruit, sugars, lemon juice, and butter.
- For apple filling: Add cinnamon and stir.
- For peach filling: Add vanilla extract instead.
- Simmer for 8-10 minutes, stirring occasionally, until the fruit softens and the mixture thickens. Let the filling cool completely before using.
Step 2: Make the Dough
- Mix dry ingredients. In a large bowl, whisk together the flour, salt, and baking powder.
- Cut in the butter. Using a pastry cutter or your fingertips, blend the cold butter into the flour mixture until it resembles coarse crumbs.
- Add buttermilk. Gradually add buttermilk, mixing until the dough comes together. Form into a ball, wrap in plastic, and chill for 30 minutes.
Step 3: Assemble the Pies
- Roll out the dough. On a lightly floured surface, roll out the chilled dough to about ⅛ inch thickness.
- Cut the dough. Use a round cutter or small bowl to cut 6-inch circles.
- Fill the pies. Place 1-2 tablespoons of the cooled fruit filling in the center of each dough circle. Fold the dough over to create a half-moon shape, then press the edges together with a fork to seal.
Step 4: Fry the Pies
- Heat the oil. In a large skillet or deep fryer, heat 1-2 inches of vegetable oil to 350°F (175°C).
- Fry in batches. Carefully lower the pies into the hot oil, frying 2-3 at a time. Cook for 2-3 minutes per side, or until golden brown and crispy.
- Drain the pies. Remove with a slotted spoon and place on a paper towel-lined plate to absorb excess oil.
Step 5: Glaze or Dust (Optional)
- Dust with powdered sugar. For a simple finish, sprinkle powdered sugar over the warm pies.
- Make a glaze. Combine powdered sugar, milk, and vanilla extract in a small bowl. Drizzle over the cooled pies for added sweetness.
