Step 1: Prepare and Season the Steak

Start by prepping your steak. Pat it dry with paper towels to ensure a good sear. Cut the steak into bite-sized cubes and place them in a bowl. Season the meat with salt, pepper, garlic powder, and Italian seasoning, making sure each piece is evenly coated.

Step 2: Sear the Steak

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once the oil is hot and shimmering, add the seasoned steak cubes in a single layer. Sear the steak for 2–3 minutes on each side until browned but still slightly pink in the center for a medium finish. Adjust cooking time to your preference for doneness. Remove the steak from the skillet and set it aside, keeping it warm.

Step 3: Cook the Tortellini

While the steak is resting, cook the cheese tortellini according to the package instructions until al dente. Drain and set aside.

Step 4: Prepare the Creamy Sauce

In the same skillet where you cooked the steak, add 1 tablespoon of butter over medium heat. Once melted, add minced garlic and sauté for about 1 minute, or until fragrant. Stir frequently to prevent burning.

Next, add the heavy cream and beef broth to the skillet. Stir to combine, scraping up any browned bits from the bottom of the pan to infuse the sauce with extra flavor. Bring the mixture to a gentle simmer.

Step 5: Thicken the Sauce with Cheese

Once the sauce is simmering, gradually add the Parmesan and mozzarella cheeses to the skillet. Stir constantly to ensure the cheeses melt smoothly, creating a creamy, velvety sauce. Season with salt, pepper, and crushed red pepper flakes if you’d like a bit of heat. Allow the sauce to cook for 3–5 minutes until it thickens slightly.

Step 6: Combine Steak, Tortellini, and Sauce

Return the seared steak and the cooked tortellini to the skillet, stirring gently to coat everything in the creamy cheese sauce. Continue to cook for another 2–3 minutes until everything is heated through.
